About Me

Hi! I am an 18 year old girl who is trying to balance a healthy lifestyle with a hectic one. It’s not easy, I won’t lie about that one, but I find that when I plan ahead I can maintain that happy medium. I have 3 things in my life that I absolutely love doing: running, cooking, and laughing. Running calms my nerves, cooking healthy food makes me feel good about nourishing my body, and laughing simply unwinds all the tension that builds up throughout the day. I also do a lot of studying since I want to be a thoracic surgeon-but I wouldn’t necessarily call that a love. Haha. I am passionate about nutrition and want to play a part in making the world a healthier place. The main purpose of my blog is to delve deeper into nutrition science, and setting an example that it IS possible to eat healthy and live a busy lifestyle. There will probably be a lot of laughs, tears, rants, and smiles on this blog, but it’s all part of balance.

Food is my hobby so this blog should be fun. I actually have a dream of going to the Culinary Institute of America just to take classes in cooking so I can one day open up a healthy restaurant. (After I retire from my physician career of course.) I know this seems pretty far-fetched but it’s something to look forward to. =)

I believe in listening to my body. When it says go, I go. When it says rest, I take it easy. I believe in feeding my body the food that will nourish it and take care of it. I refuse to feed it crap that will make it feel worse just to “please my taste buds.” I am of a mixed race as my dad is white and my mom is Korean. Being a Korean mom, she never fed my brother and I many sweets. She fed us mainly vegetables and whole, REAL food because that was how she ate when she was a child. I definitely thank her now because my body craves those REAL foods instead of crap. I love knowing that I fed my body good food. I believe in taking care of my body in the best possible way.

I am also a creature of habit. I usually find foods I like and stick to them. Hopefully, I’ll be more adventurous by trying a myriad of new foods to post on the blog! I always look at pictures on other blogs and envy their dishes. I tell myself I’m going to try them, but I always revert to my normal favorites. This should be my inspiration. =)

I hope you enjoy my blog! If you have any questions or would like to talk feel free to e-mail me at chasingelizabeth@yahoo.com.
